Breakfast Muffins: A quick and easy recipe!

Here’s the problem:

Okay, So lets get real. I usually hate breakfast time. Preparing breakfast early in the morning is stressful as I leave for work early in the morning. I want something quick but I also want to be comfortably full otherwise I plays on my mind at work. I needed saving with some breakfast muffins.

You know the whole, i’m hungry, I don’t feel as though I have enough energy vibe. It’s not great. So realising I wanted something small for breakfast, I decided to look for a quick, healthy and easy recipe I could follow.

Along came the best breakfast muffins. . .

Along came the breakfast muffins. These literally just have everything I could want in a quick breakfast, fruit, oats and a great burst energy. The other MASSIVE bonus on these breakfast muffins is that i can get up early on a Sunday (I always get up early) and make these within half and hour.

For someone who hates cooking, these are so easy and quick to make. Plus one batch, is my whole breakfast for the week sorted. Which I LOVE because that is of course productivity at its finest.

So before I share this delightful breakfast muffin, recipe with you, I want you to know I’ve made four different variations of these just to really practice and and understand what makes the most tasty muffin. This recipe is enough for 12 muffins.

Method

  1. Preheat the oven to 180 and grease up some cupcake tins
  2. Add bananas, strawberries and eggs all to the same mixing bowl. Mash together.
  3. Add the baking powder and cocoa and continue to mix together.
  4. Add the oats and gradually fold it all in.
  5. Once mixed together, pop them all into the baking trays.
  6. Add additional strawberries and blueberries to the mixture as you go.
  7. Pop in the oven for 10 to 15 minutes
  8. ENJOY!

I just love making these at the endow the weekend now, I love having these fro breakfast and don’t even need to think about anything else before lunch. All I need to do is top myself up with green and jasmine tea.

So please go and try these for yourselves if you’re currently in a breakfast funk, I promise these will do a very good job of getting you out from it!

    I’ve been wanting to find something new for breakfast for ages! Definitely going to get everything I need for these and start having them, this might even call for a walk to the shops today!

    • 💫 Well, it’s my second day of working from home for the foreseeable future. I’ve worked from home quite a bit anyway with my job but doing it long term is going to be quite a shift. 🎉However, it is something we can & must do if able.     • ✨ With all the noise from the news & a heavy work load, I’ve been finding it difficult to get a proper good sleep 💤 this week. I’m sure some of you are just the same. It’s a crazy, unknown time and difficult to just switch off from that anxious feeling. Luckily I’ve found a little  bedtime spray, a good book 📚 and night time moisturiser can help calm me down a little. While it obviously doesn’t magically solve everything, it does help me. 💫 So, I encourage you all to do the little things that make you feel just that little bit better during this time.♥️
    • Happy Sunday! 💫 oh my goodness, it’s been a hella of a busy time of late. Over the last few weeks, works been full on & I somehow managed to squeeze in a driving test along the way (which I passed 🎉) AND as a result, I’ve had a very exciting weekend shopping for my first car, feeling very happy & lucky. 😌Today I think I’m just gonna nest at home and enjoy the art of doing nothing ✨
